Whole animal and wild game butchery is a craft struggling to survive in a culture of convenience.
As development continues to encroach on wild spaces, animals lose habitat. The habitat that remains can become overpopulated, and animals suffer. Hunting, when practiced as a tool of conservation, plays an important role in the health of our ecosystems.
Butchers are an essential link in the chain from death to sustenance, but they are disappearing from the culinary landscape.
Wild game is where the craft of whole animal butchery and hunting work hand in hand to steward the wild animals we eat. I offer the opportunity to work in and learn a craft that needs passion, creativity, and dedication in order to continue.

This is a full-time, paid seasonal employment opportunity running from September through late February. Housing is not provided but short-term rentals are abundant in the area.
I practice bespoke butchery, meaning each hunter receives a tailored experience. The shop is located in Comfort, a small town in the Hill Country of Texas.
